That Bruce hypothetical also makes two assumptions:
1) The Mets REALLY ARE desperate to dump Bruce 2) The Royals are seriously entertaining offers for Dyson. If you keep Jarrod, even though it offers less power, you probably get more value from 400 ABs of Dyson + his defense and baserunning compared to Bruce. If you go to Bruce, you have 648 games to split between LF, RF, CF, and DH Gordon gets 150 (if healthy - preferably with 10 at DH) Cain gets 140 (if healthy - preferably with 20 at DH) Soler gets 150 (if healthy) That leaves 208 games. If you're trying to give 120-130 starts to Bruce, which you'd have to to make this trade, does that give you enough games to also rest Perez and Moustakas AND get Cain 25-30 1/2 games off at DH? Could get messy.

NTC clause doesn't matter much for a player on what is likely his last contract.
If the Cards are scuffling and a contender wants Fowler, he'll waive it. The only thing a NTC does is provides some security for the player in the knowledge that they won't walk in one day and be told they've been sent to Tampa Bay. It means much more for the player than it does the team, at least when it comes to veteran position players. Now giving them to relievers is stupid (still can't believe we gave Cecil one) because those kinds of players can be pumped up and traded somewhere with a reduced role. A reliever wouldn't want that, obviously, so he would enact his NTC. But if you're trading for someone like Fowler, you're starting him. And besides - I suspect many players would be just fine getting out of Matheny's clubhouse. If approached, I bet he'd waive it.

Cain has genuine stud upside because his defensive value is top shelf. But Fowler's floor is higher due to his durability, switch hitting skills and the fact that OBP tends to age better than defense.
