OK, folks. Looking for some casserole type dishes that aren’t in my repertoire. Post up your favorites.

I like one that goes something like this

Saute one green pepper and one half onion chopped in butter until clear S&P but easy on the salt - see cheese type below.

Add can of Campbell's Soup - Cream of Mushroom

add in and melt cubes of Velveeta cheese (say what you will) but it works in casseroles.

combine the above with the frozen, chopped broccoli and cooked rice

Mix all together - spray glass baking dish - back on 350 for about 30 mins or so.

I don't have the ratios in front of me - but you're good enough to 'make it happen' I know.

The green bell pepper make it pop.

In the chili and corn chip casserole family we have Straw Hat Casserole and Dolly's Dish. One gets Doritos and the other regular Fritos. I don't recall which is which. I haven't had either to the specific degree since my ex

I could do some kind of play on this, except I can't stand Velveeta or broccoli. I have a pepper in the garden that's about ready though.
