Most of my knives are collectors that are in display cases. My fathers and grandfathers or knives I have found at garage or estate sells.
Then there are knives I use hunting and fishing or for work. The only time I am not carrying a knife is in government offices or courthouses and schools etc. I spend a lot of time in county courthouses doing surveying research at the recorder of deeds or engineering offices. In the field seems kids don't carry knives now. When they make a mistake with a permanent marker on an oak surveyor's lath we don't just toss it because a contractor could pick it up and assume it's the right stake that was knocked over. I pull out my knife and shave off the mistake and rewrite it correctly. All kinds of uses even self-defense.

My go to is Spyderco. Their Facility is 2 miles from my house.
I have a future Son in Law that works there so I get some good deals. |

I'm a knife snob and also freehand sharpen all of my knives. For brands, I would recommend Zero Tolerance or Chris Reeves if you want a decently pricey knife or a Spyderco if you want a really good, but a little less expensive pocket knife.
Between beating the crap out of my knives in the Army and general usage I've learned a couple of things to help you with what blade profile/design to look out for. I would stay away from fully serrated or half serrated knives. If you need a saw, use a saw lol. Serrated pocket knives are borderline useless and a pain to sharpen. In that same vein, recurve knives are a pain to sharpen on stones, so I generally skip those blade designs. You also don't NEED to have the latest and greatest powdered super steels, like M390, Cruwear, S90VN and so on. They are great, but if you're looking at cost, you don't need then. Simple stainless steels like AUS8 or AUS10 or 154cm are absolutely just fine. |

I still have my old buck 112 hunter with the ebony handle and brass end caps. It is probably 40 years give or take a few years. Back then they came with a nice leather belt loop sheath. I use it a lot when in the field working. Like a lot of buck knives they didn't hold an edge long but sharpened up razer nice. You have to enjoy knife sharpening.

For those who hunt, what do you think of those disposable blades from Outdoors Edge or Havalon? Coin toss between the two brands or is one favored over the other?

My dad carried a green river 4215 for hunting and fishing and it was my choice also. High quality carbon steel is easy to sharpen and holds an edge. If lost inexpensive still made like the trappers and hunters who used them out west. Will field dress any North American game animal and skin with ease.

Great as a kitchen knife and equally as good in the field for hunting Old Hickory 7" Butcher Knife. Dad kept a set in a butcher block for mom and used the 10 inch Butcher Knife for Processing game. I now have these as both have now passed on.
They being carbon steel they require cleaning drying and oiling. They will take on a patina which I like.

I collect pocket knives but really in the field a 5 to 7 inch fixed blade full tang drop point knife and the sheath are handier to me.
I will carry a pocket knife when out and about in the city but in field or camp, it's nothing more than a backup or carving and whittling. My old Green River is like a well broken in pair of Redwings just comfortable and part of me.
