I have only had Quesadilla's in a Mexican Restaurant or Taco Bell .

I like Mexican 4 cheese, you can use whatever you want, As soon as the cheese is laid you throw your protein on half of the tortilla, (and veg if you want) and immediately fold over the tortilla in half. Cook until golden brown, then flip and cook until golden brown, and pull it out. Don't be smashin it or playin with it, just let it cook. Thanks I have idea's for lunch this weekend wife is going out town and just me and the kids. I thinks this will be a hit for them as long as I dont spice theirs up to much.

Best I’ve had were quesadillas on the ole charcoal grill at a tailgate. Grill chicken, roast bell peppers, sweat some onions in foil with butter, then when that’s all ready throw a tortilla on the grill and make your ‘dilla. Gotta work quickly, but damn it was good.
