After I shot my first few deer I always insisted that they give us a pound of deer jerky along with the other steaks and sausages. I felt like it was going to break my teeth off it was so hard.

A jerky gun and a home dehydrator makes tasty jerky way, way easier than thin slicing a shit-ton of meat. Just mix spices/smoke with really lean hamburger, load the gun and lay strips down in the dehydrator. Chewy but doesn't break your teeth.

Yeah, I asked for almost all hamburger after my first deer for that exact reason. They had to add some fat but I wasn't chewing on tree bark.

As far as deer meat, the single best product I've EVER had was summer sausage with cheddar and jalapeno in it.
That stuff is incredible... eat it alone with crackers, make a sandwich with lettuce and tomato, no matter what you do its awesome. |

Deer jerky is a snack that sounds good but is really a let down.
The bad thing is that you are stuck with a shitload of it. |

Just had this conversation at Costco with my wife. She wanted jerky and I said I have no idea why it's so expensive. I told her we must pass because we need to go full Guru.

I would guess this is because deer is probably the 4th ingredient in this recipe.

Really good jerky is a shit ton of work, that's why.
Normally use 250-300lbs of meat making jerky each year. It's not fun, you can eat it almost as fast as you can make it, and when you're all done it feels like you just wasted a bunch of time shrinking your food supply. Fyi: Eating it almost as fast as you make it leaves you highly qualified to post live play by play action in the pooping thread for a good 30 minutes. |
