Tonight I used a vegan soup recipe from Whole Foods I saw a few days ago. It was fantastic.
Creamy Curried Cauliflower Soup http://www.wholefoodsmarket.com/reci...uliflower-soup Man I despise cauliflower, but that one lured me. I did what someone else did in the comments and roasted it—BIG difference. Also, based on the comments I did use more garlic and cut it with some fresh grated ginger. Otherwise, my SO and I thought it was too spicey. So you can adjust the seasonings for how much spice you like. I used the same measures of curry as per the recipe. I also used a combo almond/coconut milk in stead of just almond. Immersion blended it and voilia! Rich, creamy tasting and very filling soup. The roasted seeds in curry was a nice crunchy topping. After that we had an awesome large mixed salad of green leaf lettuce, spinach and field greens, with diced avocado, grape tomatoes, black olives, cukes, purple onion, shreds of Gouda cheese and fresh herbs such as dill, mint, oregano, basil and chives. I had my favorite orange Dijon homemade vinaigrette and he had Four Seasons Italian made with olive oil and red wine vinegar. Finished with an egg/mushroom dish for a very, vegetarian night. I am stuffed. |
