****Official Biscuits and Gravy Thread****

Guys I need a good biscuits and gravy recipe for this weekend. One that's simply amazing. Some stories about the best restaurant purchased as well. What was the best b and g you have ever eaten? Also are you more of a fan of the top or bottom of the biscuit? Any and every thing about this topic shall be in this thread.

Maybe it was made with sausage grease? Or maybe there was sausage nearby?

I don't know. I've had similar experiences before. It's technically sausage gravy because there's approximately 3 tiny pieces of sausage per half gallon of gravy.

That's just not how I roll. Mine was about 3/4 pound of sausage for about 2 cups of whole milk.

It adds such a nice nutty flavor to the gravy. Quite honestly, I don't bake, so I by store bought biscuits, and the gravy is so damned good that it doesn't matter. I get my breakfast sausage from a local meat processor, and it's fantastic. Once in a while I'll sub in chorizo if I'm shooting for a south of the border breakfast. Thats damned good also. Oh, and its gravy up top.

I'll have to try the buttermilk. Never done that before. I usually brown the sausage, drain some fat if I need to, and do the roux with the sausage and cook for 2-3 minutes. Then add the milk and Worcestershire sauce until it thickens, then season with S&P.

The chorizo sounds great, will have to try that sometime.

And no foul with frozen biscuits. Some of those are damn good. As long as you're not going canned biscuits.

The only chain place I've found that serves decent biscuits and gravy with actual sausage in it is waffle house.

The other places all give you shit gravy.

Not this:

Did it say biscuit and gravy or biscuit and sausage gravy? You got ****ed on a technicality. Actually that's pretty standard to me in mom and pops for b and g seems they all go light on the sausage. The only time you usually get lots of sausage is places where you pay in gold for a breackfast it seems. If I have to pay 15 or more bucks for a breaky i would soon make at home.

That looks like it came prepared in the box to be nuked and served. Would plow the eggs and hash browns on the other plate, though.

Speaking of gravy, I was in Columbia, MO a couple of weeks ago and found a place called The Wolf's Head Tavern. It's an Irish themed pub, and on their menu they had a Loaded Potatoes plate that came covered in a mushroom gravy. Their gravy was spectacular, albeit incredibly unhealthy. If you're ever in CoMo, check it out. Well worth it. BONUS - they have a $5 special for a beer and a shot all day every day (iirc).

My local Englewood Cafe has good B&Gs. I like tabasco in my gravy, to make it red eye gravy. When I lived in Columbia in the late 1970s, there was a place on Broadway called Ron's Country Boy that had stellar B&Gs. They're long gone now, but in the day, they were the very best for Sunday Mornin comin' down cure a hangover food.

This discussion is the exact wrong niche of snobbery for me.

Love biscuits
Love gravy
Love meat

But among all the wondrous meats, breakfast ground sausage is among my least favorite [FTR, above liver and bratwurst, but below bologna and head cheese]. Really good sausage is OK [I'm particularly fond of sage], Cheap sausage is a shitty grease and spice IED.

So among things to bitch about at breakfast, the amount of cheap sausage chopped up and tossed in my gravy is low on the totem pole. A few lumps for texture is plenty.
