Fun fact: I was about 10 years old when I found out what a 'steer' was. I remember them grabbing a young calf and holding it down. My grandpa had a rubber band in his hand.

I didn't see what happened next clearly, but then he threw something that landed by my feet. They were testicles.

That was how I learned that steers are castrated bulls.

I'll be getting my quarter of steer next week. Currently in processing. Great thing about mid mo is the amount of local meat processors. Stock up one 1 pound ground beef, fajita and stew meat, steaks, get a good chunk of brisket. Can't be beat.

But even if you aren't related or know someone who raises steers, its easy to find locals selling beef. And its usually cheaper than buying from the store.
