No, you're right. Wheat is quite different now than a few hundred years ago. There are celiacs that can tolerate some heirloom strains of wheat (like einkorn and emmer) but not modern strains.

She sells a flour mix you can use that is gluten free plus provides a lot of good recipes. Her cherry almond muffins are awesome. Luckily, I can use Spelt flour which tastes identical to wheat but is lighter. It is used in Europe for pastries. It has gluten in it but I just can't have wheat. I buy VitaSpelt for their pastas too.

If I couldn't eat gluten stuff I would probably lost 80lbs lol. I can't imagine those who can't eat it. Must be a royal PITA. props to you all

It's a restaurant. New around here but there are several, so I am guessing it is a chain.

I usually make my own crust but don't always have the time. I make a nice cornmeal crust and one with flax but my favorite is the corn meal. I have to also avoid yeast, especially when mixed with flour and sugar. So I use baking powder instead. It's a crispy crust but I love it now.

My point is that the "gluten" problem is a new phenomena. You can buy unrefined/processed grains today. They still have gluten... which seem to be some sort of horrible poison and everyone has an allergy to it.

This reminds me of the Big Bang Theory episode with Bernadette stating, "My company developed a new disease and then six months later we found the cure. WE MADE BILLIONS!"

Yeah, I know but I suspect one reason is for reactions is the changes in the wheat including the gluten being affected as being the cause. Things have changed especially since GMO and wheat is one of the most GMO'd foods as is corn and soy. So why the new phenomena? Seems date coincident but is just a suspicion.

I've been gluten free for almost 9 years (since before the fad, yo) and it is a major PITA. However, no longer constantly feeling like I have glass in my intestines makes it worth it.

Gluten free as a diet fad, I'm not really high on that.

However, having to live gluten free because of celiac disease is an entirely different story.
