Wouldn't they find a way to get the food to the east coast?...or would that not be cost effective to transport that much canned goods that far?

sounds like it'll have to be anonymous. No need to announce which food bank it is, and no need to tell them, just drive up, drop off the food, and leave. If you publicize which food bank it'll be, they might refuse, no one is going to accuse you of absconding with the canned food.
