Best NON-BBQ restaurants in KC? List some of your favorite genre-based non-chains

Spinoff from the BBQ debate,

What are some of the best restaurants (non-chains) in KC for the various food genres?

I just ate at Garozzo's (the original one in north KC) and it was friggen amazing. Chicken Spiedini. Oh damn. So good. I'll be back! Entrees were a bit pricey (sorry Guru) around 20 bucks each, steak topped out at 31 but my $21 spiedini was enough for two people.

If you like place, list a favorite dish or reason why.

I've found that Yelp ratings here are misleading because some people like a place for the price or portions (or don't like it for that reason). Or their bar is low for a certain type of ethnic food (e.g. it's good for the middle of the country but if you've been around NY or LA or SF does it really hold up?)
