I believe the advantage of ceramic grill/smokers is that they will maintain a constant heat much easier than metal units. I've had a couple of Hasty Bakes (very good units), but they don't come close to maintaining a constant temperature than does my Primo smoker (ceramic).
As per what size to get, I would always recommend the largest possible as once you get accustomed to using the smoker, you'll find more and more uses and will never regret the extra size. In particular, I like the Primo over the Green Egg simply because it's oval in shape and allows a bit more flexibility. I put charcoal in one side of the firebox; that leave the other side for easy indirect heat. Best of both worlds; direct heat over the coals and indirect on the other side. Get a ceramic unit, you'll never regret it!!! PS. That said, the Hasty Bake is a VERY good unit too. |

I have for years. For one or two chickens or one or two slabs, its excellent after you learn its quirks. I have WSM 22.5 for big cooks when I do multiple butts or briskits.
