This has more storage than I think I need.
The two M.2 SSD
one for OS
one for scratch disk space

The video on the motherboard is what for this setup I'm not sure about.
Do I need to have one or more video cards?

You could go that way. I would also get a cooler, and a K CPU for ocing.
