I also think, because some people do have true gluten or allergy issues, that the food industry has jumped on the bandwagon marketing-wise to promote their products.

Same with how they switched to adding green corners to their boxes to show they are recyclable material even if they are not.

I am shocked there is not more gluten free products, that have never had gluten in the first place, say they are gluten free. Gluten free water.

Yeah, I asked Panera if they would make some gluten items, as in bread or pastry. So corporate boasted to me about the gluten-free items on their menu. So they sent me an email listing their salads not having gluten—as if I didn't know that already. Geesh!

It was useful for the soups because wheat can be hidden. In fact it's in so many products you'd be surprised. I bought crackers at Costco a month ago that advertised them as ancient grains made with: millet, amaranth, quinoa and teff. Got sick. Turns out the first ingredient when I checked the fine print was the first ingredient on the list meaning they're mostly wheat. I usually check but due to the promotion of the other grains it didn't seem like a wheat cracker at all!
