Cakes and Pies
Are you a cake man or a pie guy? And what about cheesecake? It's got cake in the name, but it's structured like a pie.

I'm talking desserts, not savory pies like a Shepard's pie (also delicious, but that's another topic), or the bizarre mashed potato/cornbread cake.

The best fruit pie? Dutch apple with a crumble crust. I'm also partial to the traditional carrot cake, with cream cheese frosting.

Much prefer pie to cake. Most kinds although I am not a meringue fan. And love it when I can (very seldom) find rhubarb pie. No strawberries should ever be in that though!

I feel the same way. I tried to make one once, but those pesky pecans would still float to the top leaving mostly a big layer of goo underneath. Just can't win with that one...and I love pecans.

Not all pecan pies are created equal.

Wife makes an awesome apple pie. They key, IMO, is a more than one type of apple. We really like McIntosh and Granny Smith.

They're supposed to do that. You can kind of get some mixed in by using some chopped and some whole. It's supposed to be kind of a layered pie (without actually layering).



If you don't like the "goo" to pecan ratio, add pecans or make less filling.

I wanna try a mince pie for Christmas but there's so many recipes: some still with meat in them and some without. I always plan to make mini ones with a star in the middle for the crust but always run out of time.

The photo was illustrative of the layering I mentioned. You don’t seem to understand that what it’s doing, IT’S SUPPOSED TO DO.

The reason the tartlets worked for you was because the pecan to filling ratio was different, like I suggested as a way to fix your issue with pecan pie.

But the pecans floating to the top is how pecan pie is supposed to be.
