Don't really know what I'd call this... It's chicken pounded, dredged, and coated with panko served with Parmesan spaghetti squash, topped with some pesto from my garden.

Pan fried, finished in the oven. It's basically the technique I use for chicken parm, I just didn't do the seasoning and coating the same way.

The spaghetti squash is good. It has very little flavor - bland even. But it's basically a vehicle for sauce, so that works. The butter and parm in it works well, and the pesto turned out really good.

Did you have any trouble cutting the squash? I had to get the knife in there and bang it on the cutting board.

Same here. I used bread knife thinking the serrations might make it easier. No go.
