It actually seems pretty easy to make fresh mozzarella, with the hardest thing finding rennet. Mozzarella and provolone are the two I really want to try, eventually making some and cold smoking it.

We made some farmers cheese. It wasn't too hard and came out pretty good. You can save the whey and boil it to produce ricotta. We are planning on making some Mozzarella next. Need to get a cheese press if we go further with the hard cheese like cheddar.

Ive made mozzarella before. Turned out great. Just followed one of the recipes I found online. It Was very similar to the one you posted.

I bought a kit online for mozzarella. It was an interesting process, but all in all given the expense and effort I decided I'd rather just buy it.
