Swordfish

So I hate fish, and seafood. In the past I only eat animals that graze upon the Earth. They had a sample at Hy-Vee of Swordfish with black pepper sauce. Tried it. Was amazing. Bought some, grilled it, put the sauce on it and was just as good at home. Pretty excited because I've found a fish that doesn't suck, and it's much healthier than eating steak all the time. What other kind of fish and seafood doesn't suck? I found Swordfish to be more "steaklike" than other fish I've tried. It cut easier, didn't flake off like cod does, and didn't have a deep distinct fishy taste. 5-stars.

I have a friend that fishes in Alaska so we buy wild salmon in big boxes from him and end up eating that the most. I have found that a lot of my guests who don't like salmon for being to fishy really enjoy it when it is beer battered & fried, splashed with lemon, and dipped in dill cucumber sauce.

Halibut cheeks are the bomb! We had them up in Anchorage. I have yet to find them on any other menu.

Oddly, since I am half Danish, I am not a fan of fish at all, but I do like the fish and chips at the Irish House (real British malt vinegar is the stuff!) and a type of flounder that the Danes call rødspaetter, which means simply red spots. The red spots fish does not taste fishy and I could happily eat it twice a week. All you have to do is dust it with flour, fry it in a skillet with butter, and squirt some lemon on it. Mmm, mmm!

I did have herring last year prepared by a very eccentric Viking chef and whatever he did to it made the herring delightful. I usually avoid it since it is one of the fishiest fish I have ever had, but he took that out of the equation somehow and it was served with a smoked cream cheese sauce as well.

I also had smoked salmon once over in Denmark that was surprisingly good. Salmon is another fish that usually makes me feel like I got the slime off a fish's skin all over my tongue. I had seconds of that smoked salmon.

I used to be the SAME exact way. I first discovered what "good" fish tasted like when I went to Hong Kong in 1994.

Fish that have low oil in them tend to be less "fishy" tasty.

Fish like Blue Fish and Salmon are super oily and very strong.

Red Snapper, Grouper, Mahi Mahi, Swordfish, Tuna are less so and not fishy at all.

Steamed in a bamboo steamer or grilled in a basket on the grill will give you a clean taste.

Lobster.

I cooked lobster sous vide for a tailgate, dunked it in an ice bath and brought it back to warm on the grill when we got to the game. Easily the best lobster I've ever had.

But we have a sous vide thread for that so I'll stop hijacking willie's fish thread.

P.S. Tilapia is a trash fish and should not be eaten by anything but cats and the homeless.
