Got a new smoker, what should I make first?

So I got a new smoker... I'd been wanting a new one for a while, and this one came at the right price: FREE!

It's a Bradley BTIS1 that a friend got and didn't want. Yeah, it's electric, but it was free.

So brisket or ribs? I've been in Memphis for the past week, so pork butt is out. Or chicken? I saw some smoked Cornish game hens this week that looked pretty fantastic.

Thighs are VERY forgiving. Probably the most forgiving piece of the bird.

Those thighs from Costco were dirt cheap. You screw it up, not out a lot of cash. Better to get a system down before moving on to ribs or something expensive.

I don't think I've ever done a whole chicken. Don't think it cooks evenly. Just did my first turkey. That worked out okay. Maybe I'll give the whole bird thing a try.

Smoked many a huge pork butt and beef brisket. Always was satisfied with the results. But, Phobia has the best smoked pulled pork I've ever eaten. He uses the full wood burning smoker. Always gave me shit for my cheater smoker.

Seriously, thighs can take some abuse. America's Test Kitchen once actually suggested that to get the best texture out of thighs you actually have to overcook them a little bit. They're great for low and slow.

Whole chickens are outstanding. And I don't even inject or brine them. We just season them up and throw them on the smoker. Haven't messed one up yet.

If you can rock breasts, you're good to go on chickens. Wife and I have done Cornish Game hens too. Those are really good for a one meal shot.

I may have to do that. I think I could fit a billion or so of them in the smoker.
