Really good jerky is a shit ton of work, that's why.

Normally use 250-300lbs of meat making jerky each year. It's not fun, you can eat it almost as fast as you can make it, and when you're all done it feels like you just wasted a bunch of time shrinking your food supply.

Fyi: Eating it almost as fast as you make it leaves you highly qualified to post live play by play action in the pooping thread for a good 30 minutes.
