Got a new smoker, what should I make first?

So I got a new smoker... I'd been wanting a new one for a while, and this one came at the right price: FREE!

It's a Bradley BTIS1 that a friend got and didn't want. Yeah, it's electric, but it was free.

So brisket or ribs? I've been in Memphis for the past week, so pork butt is out. Or chicken? I saw some smoked Cornish game hens this week that looked pretty fantastic.

No kidding? Okay. More for me then. Although, I haven't had any of the good stuff since I left Houston a decade ago. Why don't I ever seek it out when I visit there? Because I'm kinda dumb. For some reason we hole up at my in-laws and when we go out we go to her favorite TexMex places.

In defense of Boudin, I'm not a big fan of Cajun food overall, so I'm probably the wrong judge. I can do without the gumbos, ettoufes, jambalayas. It's just not my cup of tea. I do enjoy crawfish and po' boys though.

County Line has edible Q. But their sides, specifically their mushrooms made the biggest impression on me. That's about the only place I'd recommend though. There's a place called Hoots Hollow over by the greyhound track that has incredible chicken fried steak. I've always gotten that, never tried their Q.

I don't know how you can dislike Cajun food. That stuff is possibly my favorite ethnic style, if you can term it that. I employ a lot of Cajun techniques in my own freestyle crap.
