Great on crackers.
You might want to try Pecorino. It has a bolder flavor then Parmesan due to being made from sheeps milk. Just stay away from the casu marzu.

Velveeta - yeah, full of preservatives, but it will still mold, and more importantly, dry out.

Also not needing refrig - Mayo [so long as not mixed with ANYTHING], mustard, ketchup, pickles, manzanilla olives, most anything vinegar based.

Shouldn't but does, at least here in the MW. Between me and my parents, the good stuff at KC farmer's market, Soulard farmer's market, Eckert's [St. Louis' version of Stephenson's] and Trader Joe's have each developed a rime of mold at the top.

Meanwhile I have 3-4 well aged jars of honey that remain completely inert, only one [run of the mill plastic honey bear squeeze bottle with locally produced honey] has even crystallized.
