Fresh coriander seed for grinding is first on the shopping list.
One recipe I saw had only pepper, coriander and garlic powder for total ingredients. I believe in simplicity, just hoping to get some opinions if simple is the best approach to pastrami, as well. Suggestions on smoke wood selection? I have apple and Mesquite on hand. Not a lot of selection on smoker wood varieties in my little town. Dinny |
