Pastrami: Do You Even Make It?
I never have. I have a brisket flat that is finished brining at 6PM today. I have only skimmed a couple of recipes and have only decided on one thing for sure. I will be using fresh ground white pepper instead of black pepper. (it's a grape jelly thing, not a race thing) (don't ask)

So. Before I schlep off to the fresh herb and spices store, can someone tell me what herbs and spices I need and what to do with them after I get them? It would be nice to confine the tellin' to pastrami, but whatevs.

I have considered starting it on the smoker tonight, but if seasoning and overnighting in the Frigidaire is the way to go, so be it.

Really wish I could make a great loaf of marble rye, that is another bucket lister.

One recipe I saw had only pepper, coriander and garlic powder for total ingredients. I believe in simplicity, just hoping to get some opinions if simple is the best approach to pastrami, as well.

Suggestions on smoke wood selection? I have apple and Mesquite on hand. Not a lot of selection on smoker wood varieties in my little town.
