Spices and seasonings...

What are you favorite ways to spruce up your food?

I try to limit my salt intake, but I love a variety of peppercorns. I've currently got two pepper mills dedicated to white and black (tellicherry) pepper, but I really would like two more - one for long pepper and one for grains of paradise.

I also try to buy whole spices whenever possible, and keep anything with oils in the freezer where they'll keep for quite a long time (whole cumin, coriander, peppercorns). It's also important to toast spices in a dry pan or bloom in oil.

You ought to know that I don't care what they say on nutrition. They have little credibility to me in that department.

According to that article, no studies bear out what they claimed...and the article says why. Same with their claims on saturated fat. They're experts on pathology and disease ( when it's already too late). They really know little about nutrition and often are behind the curve on the latest in nutrition but accepting of some things later. That they support the govt food pyramid says enough, for me to ignore them or do the opposite on some things.

You ought to know by now that I use integrated medicine—a combination of alternative therapies that are more natural over medical but combined with some medical.I am very into nutrition and I seek profressional health care providers along those lines.

I salt certain recipes and/or salt others at the table instead or in addition to. I have no health issues.

My doctor is all over this. I deal with high blood pressure and have since I was in my 20s. According to him salt/sodium is not an issue, but not a good idea in large quantities. They've recently lowered the sodium intake significantly for everyone. He's not a big fan of that because it's completely unreasonable.

If you have kidneys that are in working order and you're not retaining water (swollen ankles, etc.) then you're fine.

The problem lies in a change in your body's ability to process salt/sodium that you don't notice.

On par, it's better to keep sodium intake to 2500mg per day. That's not a hard and fast rule, but a guideline. The new limit is 1700mg or something unattainable.

Not only that but I have had very low blood pressure. It was so low at one point, a doctor during a physical looked at me and asked me if I was alive. I worked on getting it to normal.

1700 seems very low. My kidneys suck, and my limit is 2000 mg.
