What food(s) do you think are overrated?
Today’s bounty. Honey cured in the back, black pepper in the front. Smoked at 200F with pecan. Last edited by Fire Me Boy!; 02-12-2018 at 07:10 PM.. |

Recently, I've been making a 3 egg omelette (one egg and the equivelent of 2 egg whites) with parsley, black pepper, fresh uncooked spinach and jalapeño jack shredded cheese cooked in a tiny bit of hot canola oil. The omelette is tender, the spinach soft and flavorful while the cheese gives it a kick. |

I'll often make scrambled eggs (with a touch of sour cream), top it with Monterrey Jack cheese and salsa, with a sliced avocado on the side. |

You have to like goat cheese though. I do. Soften it to room temp first. Roast your own slices of tomato ( I broil them up quick), cook up some bacon. Then make the omelette's eggs. Add a layer of goat cheese, add layer of spinach, then slices of the roasted tomato and break up pieces on bacon on top of the tomato and spinach. It is really different and delicious. Lot of work though. I usually make the bacon the night before. I have made an apple cinnamon omelette before too. You can add goat cheese to that too. |

When you fry eggs do you go high heat and make up crispy eggs with a soft-ish center, or do you use low heat to the point where the 'customer' is going to get eggs that are exactly how they want them? I like high heat, crispy bits, the yolk's just gonna do it's own thing and we'll find out when the white is dark and crispy on the edges.

So you're low heat - but heat it long enough to be thoroughly cooked and crispy bits are an acceptable byproduct of that thorough cooking process.

I've never gotten into Indian food. I have friends and family that rave about it and I've tried probably 15-20 different Indian restaurants and I've just never gotten into it. Curry is pretty good but there are curries from numerous Asian countries so I don't consider curry to be exclusively Indian. In fact, if I have to go to an Indian restaurant, I'll get some curry because I can eat it.
