quarter cup kosher salt, quarter cup pepper, quarter cup garlic powder. 1 tsp thyme.
Spatchcock the bird. Dry rub the bird on both sides liberally. Set in refridgerator uncovered (very imortant) for three days or so.

Smoke over pecan, cherry, apple wood. Something not too strong.

Brine it for sure. I have been smoking my Thanksgiving turkey on the BGE for 5-6 years now and I have never had a better or more moist turkey (believe it or not), injected and fried included. It's pretty close.

You will never have it exact because it's not possible, but the difference is close enough that you won't mind when you remember that it's more healthy and you don't have to buy jugs of peanut oil anymore.

I have done many of them and have never brined it. They have always turned out well.

The last few years my younger brother has soaked his in a citrus ice bath for a few days and they get nice and tender.
