quarter cup kosher salt, quarter cup pepper, quarter cup garlic powder. 1 tsp thyme.
Spatchcock the bird. Dry rub the bird on both sides liberally. Set in refridgerator uncovered (very imortant) for three days or so. Smoke over pecan, cherry, apple wood. Something not too strong. |

I have done many of them and have never brined it. They have always turned out well.
The last few years my younger brother has soaked his in a citrus ice bath for a few days and they get nice and tender. |
