we're leaving for ga. early tues morning. son, dil, and grandaughter will host the holiday. smoked a bird today and wrapped it up, put it in the fridge. the wife will make noodles when we get there. gonna caravan down w/the son and his wife and kids. 15 hours. come home sunday and hope to catch the game on a radidio somewhere. jammed the bird full of apple slices. have to use another turkey breast w/broth, cause the noodles don't work well w/a smoked bird(that's what she says). hope to come home w/a shitload of pecans. wanted to get a hotel room so i can sleep and shit by myself, but the wife says it's a family deal, so ok. i'll try not to be a grouchass sec

It would be better if you brined it but I never have. I don't have a big enough vessel for brining as big of turkey I need for my family.
I do inject butter several places in the breast thigh and legs. Just be sure to get lots of butter on the skin. I'm sure you know that. I had a thread about it a few years ago. I'll see if I can dig it up. |

I'm also a fan of the garlic and herb injection mixture that can be bought at the store.
I get multiple turkeys for free each year, so I typically smoke one turkey and do the rest in my big easy infrared fryer. |

Yes, I've never brined for smoking, but my wife dry brined the roast turkey last year and was fantastic.
