I've thought about it as I butterfly whole chickens when I smoke them to get them a more even cook.

Plus I am the only family member here with a good size formal dining room and table. So I get all the work. |

This is my wife's family recipe. Melt a stick of butter in a big stock pot. Add celery and onion and sauté until soft.Brown some breakfast sausage. Add some chopped parsley.Begin adding plain white bread cut into cubes about a handful at a time. Stir like mad until your arm hurts really bad.then you can add some water to soften things up a bit. Keep adding bread and water while stirring like mad on the stove. The bread cubes will lose their shape during the cooking process. Just the moisture level to match your taste.Season with thyme salt and pepper.

Glad this thread came up, I'm supposed to bring stuffing this year for the family gathering. So far, two boxes of stove top and a chopped apple. Thanks CP!

I'd also suggest adding chorizo (or chourico) for a bit of flavor. And here's sort of a middle area, with a quick stuffing by ATK: Shaping-up-stovetop-stuffing/ |
