Ever eat spinach pulled right from the ground right away. It is incredibly strong in flavor, much more so than anything I bought in supermarket.

Cutting them too far in advance isn't good for best retention of nutrients either.

I have no idea how long they sit there at your Hy-Vee but I do know supermarkets are well lit...and I've been to Hy-Vee enough. Still better than nothing though. I eat at Sweet Tomatoes every now and then and their produce is under lights. I keep my herbs and spices out of light in my kitchen. I no longer use my old spice rack but keep them in a dark place. Eat local, eat what's in season. I travel a lot, for a variety of reasons, and I always try to get some local honey wherever I go.

Only needed general facts that I already knew. I didn't need it for myself just wanted to back it up and and only looked for those few points which are still true. I don't need a research article anymore to know, because I learned about it long ago under basic nutrition and food storage. This called for something simple not a posting of whole academic paper that no one's going to bother to read. It's a pretty basic point and common knowledge. Once any plant food is pulled from the ground and gets to you, doesn't mean the food is completely spoiled...it just means the process begins. I've tasted the difference. Why do vegetables taste so much better when they come right from your garden. Happens when holding spices too long.

Your point about the kind of light is just silly once food is pulled from the ground. As obviously I am not talking about natural sunlight.

Yeah, pickled is fine as perishable food gets preserved and the acid kills bacteria. That's also why preservatives get used — to extend the life of the food.

Oh and fermented foods like sauerkraut are very good for your gut too.

My father can't keep weight on and I'm a fatass trying to lose it.

I'm actually ordering every high calorie meal in the book to keep his fat/weight up.

I've two extended family members like that. One never handled it and she's as thin as a rail. Never gains weight no matter what and drinks a lot of booze. Frankly. I think she's an alcoholic as it interferes in her life even. The other had food allergies that once discovered led to an increase in his weight. Now he's too fat—since he started drinking beer again. LOL

How you cook vegetables is also important to keep as many nutrients.
Boil the hell out of them, nutrients go into the water but it also removes a lot of the taste. Like grayish green beans etc. Lightly cooked and al dente is the way to go. They taste stronger though as a warning to those who don't like veggies. It's another acquired taste.

If you do boil—at least save the water in a jar and freeze it. Use it in soups, gravies and sauces.

I'm a mixed bag, really. I eat a ton of things that are healthy but also a ton that aren't healthy in the least.

Generally speaking, I meet my nutrition quota every day. I'll have a couple pieces of fruit and eat veggies raw for optimum nutrition. I eat a ton of meat and I get a lot of grains (probably too many grains).

I only drink water so no issues there, but I do have a sweet tooth. I'm trying to be more conscious about putting processed shit in my body so I'll avoid anything in a box and most fast food places like the plague, but if I'm busy all day and can't eat/don't have food at the house I usually won't hesitate to stop somewhere and get a warm meal.

I eat pizza like 3 times a week as well, but is pizza really that bad for you? It's high calorie but it's a decently balanced meal. It's got carbs, protein and fat. I like to load mine up with chicken and a bunch of veggies to feel healthy AF.

I've tried to go on healthier diets (cut out processed foods and only stick to things like chicken/fish and fruits and veggies) and I always lose weight like crazy.

How old are you? That problem may solve itself over time.

I was the same way through my 20s. In my 30s I started picking up weight, and now in my 50s I have to be careful about watching my weight.
