Two eggs sunny side up on top of a concoction I call Spanish Cabbage. Take a basic Spanish Rice recipe and substitute cabbage for the rice. Here's mine:
Medium onion, chopped Bell pepper, chopped 1 Tb olive oil 1 lb lean ground beef 1 can chopped tomatoes, drained 2 T Worcestershire sauce, or to taste 1 T Chili powder, or to taste Tobasco Sauce to taste 1 t thyme, or to taste Salt and Pepper to tast 1 small head of green cabbage, chopped Saute onion and green pepper in olive oil over medium heat until soft. Add ground beef and brown. Add remaining ingredients except cabbage and heat through. Add cabbage and saute stir through. Cover and stir occasionally until cabbage wilts and achieves desired tenderness. I will get one dinner and 4 breakfasts out of this. |
