Exactly. The original maize plant had a very high germ content (lots of protein). Today's corn, which whether we like it or not, is the main ingredient in everything we eat, is almost entirely starch. It's almost like turning a steak into white bread and equating them.
Local grown sweet corn is some of the most amazing food you'll eat. Peaches and Cream was always my favorite. With that said, I'm not overly optimistic that it would cause any dietary changes. Said food companies have advertising budgets that are just way too big, and the average consumer is just too damned dumb.
