Which one you prefer to use?

About the non-stick, is there a difference between porcelain and ceramic?

I disagree with this. If you don't heat your non-stick up past medium high, it shouldn't be peeling. I've had one 10-inch TFal Pro non-stick for a couple years now, and it's nearly as good as new. Was only like $20.

If you don't try to melt it this Jamie Oliver pan will last >$50 w/ 2 year non stick warranty.

The anodized titanium is even better. Cost 3X more but the bottom plate makes sense to me.

A non stick Le Creuset was about $250 10 years ago.

I use the brillo pad and a plastic scrapper. It works for me but the food particles get stuck in the brillo and is impossible to get out. I suppose the chain mail is easier to clean and reuse. The brillo eventually probably costs more in the long run. This of course is just a guess on my part.

dishwashing detergent is hell on non stick. it only take a minute to soap it, rinse it and dry.
