Grits

I know they are very common in the South but feel they are an underrated breakfast food.

Tough to beat some cheese grits and bacon.

Best grits I make... caramelize sliced onions in butter, add liquid (5:1 ratio liquid to grits, I like milk and chicken stock), slowly whisk grits and cook for 30 seconds. Put it all in a crock pot on low for 4 hours. Finish with butter and season to taste.

I really like the tabasco recipe shrimp and grits. It features ridiculous amounts of bacon, but it's damned good.

I should add that I don't prepare the grits like they say, but I do the shrimp per their recipe.

Oh, and I despised grits until June 2014 when I had some stoneground ones for breakfast in Thomasville Georgia. Really creamy and flavorful. So then tried some shrimp and veggie ones for lunch there later too. Also very good. Completely reversed my opinion about grits.

I have never had grits. They don't look appetizing and I'm not one for hot slop to start my morning. My grandma fed me malt-o-meal when I was a kid. I don't know what the **** that was exactly, but she dumped milk and sugar in it and I remember thinking it was OK.

Same crap, just with wheat instead of corn. It was always forced on us kids, cause it was so good for us. But it had the consistency of baby shit, and tasted like cardboard, so they had to bury it in sugar/honey just to get us to eat it. Kinda cancelled out the whole "It's so good for you" thing...

I don't know about the cream of wheat, but it's almost guaranteed those grits were instant, which are utter garbage. IMHO, it takes someone that's respecting the ingredient and giving it time and love to get good grits. It took me 7 years in the South to find grits that I like, and once I figured out few things, it's easy to get good grits now.
