Most of the ingredients come separately packaged. Packets include: ground cayenne, paprika, cumin/oregano, onion/garlic, chili powder, salt, and masa.

I swap the dried garlic/onion with fresh. I used one onion, four garlic cloves. I also swap the chili powder for my own homemade chili-p, cut the cayenne and replace with some aleppo.

It's simmering now. Will be done in about 1 hour. I'll cool it and allow the flavor to meld for tonight's dinner. When I reheat, I'll add the beans and the diced (drained) tomatoes.

I like to play with this. Sometimes I use fresh herb, sometimes I use beer in place of the water, sometimes beef broth. To up the flavor, I usually bloom the spices in the browned hamburger. This time, I sweated the onion, added the garlic and spices, and then the water and tomato sauce, then the burger. Basically boiling the ground beef, which I've seen some folks do for a finer texture.

I agree. It's even better if you doctor it a little. It's passable, and pretty good for. 30-minute chili.

What is it? Molcajete? What's that.

Tonight just tomato soup and garlic toast. Too lazy. I did make honey zucchini walnut bread but my timer broke and I forgot I had it in the oven. Wasn't that badly burnt but burnt nonetheless.

Kinda hard to explain as you can see there's a lot going on in the picture. Basically shrimp, bacon wrapped shrimp, cactus, carne asada, onions, panela cheese, a whole green onion, a whole jalepeno and a red sauce made with dried peppers. Similar to a Chile Colorado sauce. Slap it on a tortilla and it's gold. They're pricey, this one cost $20 but well worth it.

Joint locally makes a decent molcajete.

BEP, it is actually the pot thing it is served in.

It's actually a mortar.

But is there an area where you ask for a molcajete and it's known what you're asking for food-wise? Or is a loose definition of Southwestern food in a stone bowl?
