also you probly do this but you can stoke out the pastes by adding more than just chilis...add a huge handful of fresh basil / cilantro for a green curry , etc.. whatevers fresh..like lemon grass or some citrus zest or green onions , ginger......or some of the other ingredients...just to kick it off a bit more

I had red curry chicken prepared Thai hot for the first time tonight. Not that hot. I've made my chili spicier, had spicier chicken wings, and had hotter chinese food.
I've been ramping up the hotness at three different Thai restaurants across town the last few months. I can tell already that none of them are going to make it that spicy. Is it possible for a whole town to mild on the spiciness? |
