Anybody like or make bacon?
My most ambitious bacon makin event was this week...Started with 6 whole bellies. Did an EQ cure for 10 days, 3 days to dry in fridge, then 6 hours Monday and 6 hours Tuesday in smokehouse. Held temps between 65 and 95 with majority at about 70, smoke was dry native pecan and apple.

I do a 4 day cure 1 day fridge dry. Hot smoke for 4 hours. Cool overnight and slice at 4.5.

I only do breakfast bacon.

Butchered close to a hundred hogs in 2020.

Started making my own bacon about this time last year. After some trial and error, I think I have the seasoning down. 10 days in a bag in the fridge, flipping the bag one a day, then smoker at like 150 for however many hours it takes. Not buying the big long bellies like in your picture, but also it's just me and the wife, so we get like a 5 pound belly, and once it's smoked and ready, I cut it up into "portions" and air seal it, date it and freeze. It's the best bacon period. Can slice it as thick or thin as I want. I get better results using the oven rather than on the stove...the suggestion above about the air fryer is intriguing...gonna have to try that!
