I cook the great northerns for about 4 hours - it's very easy - I keep it simple - but it's perfect.
I put a bunch of cubed ham - bag of great northerns - I go about two inches of water above the bean level - I add the 'included' pack of ham flavoring - one whole vidalia onion - salt and pepper (plenty - it's a lot of volume there) - 4 large tablespoons of bacon grease - you can also drizzle olive oil in there - as it cooks - I like doing that - plus it's good for your skin IIRC. But yeah man that's it - and then be sure it goes for about 4 hours - I've heard if you cook them longer it'll decrease the gas effect a little bit. Add kale if you choose, You could get nutty and add andouille sausage as well. Don't ****ing saute the onions either - because you want it in there from raw state for optimum flavor release.
