Pork carnitas are arguably my favorite food and I've eaten a lot of them in the US and MX, including my own which I'm very fond of. These were some of the best I've had. I'm also to the point when I see bacon on something I automatically think of it as gimmicky, but it definitely added a needed smokiness, texture and over-the-top savoriness here. These were a total flavor bomb.
