But a lot of times it just looks like the offense out executing the defense. Could it just be that offenses are just getting more innovative and creative way faster than defenses can keep up?

I don't watch alot of college football but I imagine if we haven't already we will very soon see alot of college defensive concepts\schemes start being used to try to slow down these spread NFL offenses.
