It's not the money - it's the
food. The reach is far enough south that they'll still be able to generate crops, etc... whereas a lot of the rest of Westeros has already gone fallow.
Tyrion wouldn't have needed to know a thing about the gold stores, really. He'd have just needed to know that Highgarden was absolutely going to be attacked at some point and leaving a skeleton crew there was pretty inexcusable. I suppose the counter is that he couldn't have known that Tarley would turn on the Tyrells.
Get some scouts, man. Pretty rough to get caught napping on that one.
