To properly carb load, you have to go low-carb for a week or so beforehand and deplete your muscles. Then, you carb load with simple carbs, like bread, simple sugars (not fruit), starches, and a minimum amount of fiber and fat. It can be anything you want within those parameters. And you do it over a 24-36 hour period, about 100g of carbs per hour.
There's no need to do this unless you're prepping for a race or something, or have a specific dietary approach that calls for it, like Ultimate Diet.
