Corsendork Pale Ale...never tried it before....outstanding....(second?) fermented in the bottle, corked, from Belgium....a beautiful gold-yellow color, never seen a beer I wanted to just stare at...makes even the good domestic pale ales I've tried taste like water, though I guess they use a different method so the comparison really isn't fair....jesus they do beer right across the ocean...7.5% alcohol

here's a description from someone who knows about beer stuff (I don't):

" Phoenix reports the Corsendonk ales are bottled with their natural yeast, which provides a second fermentation in the bottle. After bottling, the beers are warm-conditioned for two weeks and then cool conditioned for three months. According to Phoenix, this allows Corsendonk ales to mature in the bottle [double dagger] the pale for two years and the dark for up to five.

Beer critic Michael Jackson describes Corsendonk Monk's Pale Ale as "a deceptively potent ale in the golden |triple' strength style of Belgium's Trappist monks." As Jackson records in his book, The World Guide to Beer, the Belgian tradition of brewing strong ale extends back through the middle ages. According to Jackson, the tradition of brewing these strong beers may derive from the desire for a full-bodied beer to serve as "liquid bread" during Lent.

In Jackson's review of the beer, he said that Monk's Pale "has a very clean palate, beginning with a dry, lightly citric fruitiness, and finishing with a distinctive and delicate, perfumy hop character. Very light and fluffy in texture, giving little hint of its great strength. This beer has living yeast in the bottle, and will evolve with age, becoming softer and cleaner."

At one point, I could get it here in Billings, but no more! The bastards pulled it out of here. At this point in time, when I drive down to Cody, WY, I always score 2 or three cases for the man fridge out in the man shop. There are only three beers in the man fridge:

1. Teton Ale
2. Alaskan Ale
3. Rogue Dead Guy Ale

There is only one item in the man fridge..........beer!

Fairly high carbonation, but still smooth. Blackberry flavor is there, but not overwhelming. Typical ale-y aftertaste. I'd give it a thumbs up.

Thanks to Jamie....I discovered 100 proof Smirnoff, and Kalua Especiel' (80 proof).....nearly 1/3 more punch as a normal white russian. Pretty smooth too.

After the first one, you can double the recipe...and add some mix, to taste....and you'll see they are MUCH smoother. :)
