Here's the thing.

An Amazon Echo only engages the microphone when you say "Alexa". The microphone is otherwise "off". It is listening but only for "Alexa". It doesn't send data any other time because I've put a Wireshark on it and watched the traffic.

If you believe it's listening to you at all times, then I might as well let you know that the only indication you have that 3rd party apps aren't using your phone's microphone is an indicator on the screen, which can of course, be spoofed.

Your phone is listening to you, just like Amazon is. ;)

And yes your phone can be used to listen, hence why IOS is best way to go when it comes to privacy because believe it or not apples while invasive is the most secure

There was a software bug in the Google Home product that cause it to continuously record audio until the user ran out of space to hold the files.
