Calling all BBQ chefs! What do I change or add to make this recipe taste spicy?
Got the briskets in the smoker........
Just made this sauce using this recipe for Gates original BBQ: http://www.food.com/recipe/gates-son...bq-sauce-16745 Actually, pretty good stuff. BUT I love Gates SPICY BBQ sauce. What do I change or add to make this recipe taste spicy? OR does anyone have the secret recipe to Gates SPICY sauce? Thanks! Last edited by Trivers; 10-21-2012 at 01:07 PM.. |

More ground red pepper or whatever else you use to spice something up. Ghost peppers? A spicy shaker sauce you have on hand? I don't know - your options are endless but obviously you have the cayenne on hand. Just throw 2-4 more tablespoons of that in there and it should ramp it up to where you want it.

Normally when I want to make something spicy, I add spices.
P.S.--Pollard sucks.

puree some red chili's or you can probably even add a decent amount of Sriracha and/or cayenne.

Cayenne pepper is the best way to add heat without altering the flavor much. If you just want to heat up an otherwise good recipe, that would be my choice.
My next 2 choices if I wanted to add to the flavor would be jalapeno and poblano/ancho. I also really like the flavor of habanero, but sometimes it's difficult to control just how much heat you get with the flavor.

Simmer your sauce for about 30 minutes with a whole jalapeno or two. Remove the chilies when done. Don't let it boil hard or the jalapenos will pop. This will give you some heat without making a big change in the taste of the sauce.

Chop up about 100 ghost chillies to put in your sauce. That should do the trick
