I really wanted to smoke something today, and specifically was going to bite the bullet and pay $7/pound for brisket. Everything in my town and the next town over was trimmed flats only, and I didn't want to go all the way in to Costco to get a full brisket.
So maybe next weekend. Today I'm just grilling some nice ribeyes with some hobo pouches with yukon gold potatoes, carrots, and onion. |

Surf and turf cajun dirty rice, stuffed in huge red, orange and yellow bell peppers then baked
Zatarains dirty rice box mix (sue me) 1 pound ground beef 1 bag uncooked shrimp Chopped celery Chopped onion Garlic Bell Peppers Olive oil Cook down celery, onion and garlic in extra virgin olive oil and extra cajun seasoning - remove from pan Brown ground beef Add all together with rice mix and cook, then let cool Fold uncooked shrimp into rice mix and stuff in peppers Bake in a covered dish @350 for an hour |

Ok, I went all in this weekend. I've always wanted to make Pastrami at home. I followed these guys recipe, which is a pretty damn close approximation of Katz deli Pastrami, often considered the best there is. Here's the link: http://amazingribs.com/recipes/beef/..._pastrami.html
Now, it is very time consuming, but much of the time is in the smoker, or in the refrigerator, so it's not as bad as it sounds. Just in case it didn't turn out, and since I'd have the smoker rolling, I thought I'd do a full packer cut of brisket also. I've gotta say, the pastrami might be the best thing I've ever made. It melts in your mouth, has amazing flavor, and is, well....perfect. The brisket turned out great as well, and as you can see from the pics below, the point was sick juicy, and I chopped it into burnt ends. It's the second and third pic. Pastrami is the last two. Y'all gotta try this. |
