The PBC cooks around 300, so you're actually only smoking about 6. I hang for 3-4 and then wrap and lie flat.

You don't get the smoke ring pronounced, but my results have been very tasty. I'm willing to sacrifice a smoke ring to cut the cook time in half.

I never had the inclination to subject $125-$150 piece of meat to that type of punishment. Is this method a acquired skill or one out of necessity?

I bet the fat dripping into a camp fire for hours mean't you ate with a sidearm ready?

Used to be that down here in the South at the megamarts, but Costco usually has the whole packer briskets for $3-$4. No ****ing way I'd spend $7/pound.

Packer USDA Choice? I have seen Costco having some great prices(<$3) in the past but I'm not near one. I learned my lesson on Sam's Brisket. Their supplier seems to get a one up on grading. They say it's angus but not Certified Angus.

I've learned that the side is graded at the ribeye and the processor separates the prime grades and Sam's is more like top choice.
