"That the ricin wasn't actually used on Brock is beside the point."

I don't think it is beside the point, especially since Jesse KNOWS it wasn't used on him.

Eh, I hate complaining about this since it is a great show, but this really is the weakest plot point that I can recall.

The epiphany isn't about the ricin, it's about the fact that Jesse's first instinct that Walt was the one that poisoned Brock was correct. Huell swiping the weed (which is what he thought happened to the ricin cigarette to begin with) just makes him think about that whole poisoning situation all over again and with his new perspective of Walt, he can see how Walt manipulated him into believing that Gus did it. This was confirmed when he confronts Saul.

This video is a insider look at the end time episode where Jesse confront Walt about poisoning Brock (the confrontation portion starts at around the 1:30 mark). It gives a little more perspective of what Jesse's initial thoughts were and how Walt talked him out of it.

It's not just the firing up, it's also that the guy won't pick someone up who is high. I mean, is he patting him down on the side of the road (obviously not), giving him a red eye test before he gets in the van? It's like complaining a guy on the '27 Yankees didn't leg out a fielders choice once. It didn't bother me, it just came across a bit convenient.
