Wagyu Steak

The best ****ing steak I've ever tasted. It is amazing...and unfortunately SUPER expensive. I thought it was just cow raised a certain way and massaged certain times a week. But apparently after some reading it is just a cow breed.

If it's just a cow breed, it's a little frustrating that it is 10x as expensive as regular beef. I suppose it's just a rare breed of cow at this point that is very sought after. Curious to how many of you have had it, and where? Especially in Kansas City. I've never seen it in supermarkets, and would like to buy it and just cook it my own.

I treat myself to Wagyu at the Majestic downtown from time to time. It’s incredible and well worth the $. And btw, the Majestic doesn’t **** around. It’s real Wagyu.

Isn't American Wagyu just a real Wagyu mated with an American breed? So in a sense, it is half Wagyu or some degree of Wagyu. The steak I had was Texas American Wagyu and it was still outstanding.

It's like this, if you have waygu blood, you are wagyu. Any Wagyu blood. In able to be called what Snake River sells theirs as they must prove that they have a membership and sell an Angus and Wagyu bloodline. I don't think there is anything else. Oh they have to pay or own the rights to call it "American Wagyu" by the The American Wagyu Association.

So you can either pay for and meet the standards of an association such as Texsas American Wagyu Association. or just call it what you want to. I may have a 25% Wagyu bull and breed it with a Heinz 57 cow and I can call it CBarret's Certified Wagyu Beef. Just not TWA or AWA without writing a check and hopping through a hoop or two.

it's like Mayo, It may say it's "olive oil mayo" but soybean oil in there too. Olive oil mayo and Wagyu beef have something in common but you still don't know what you're eating.

Not to derail, but Without looking it up, I think those ads are paid for by the various industry checkoff dollars, not USDA. Which would mean that they were paid for entirely by producer dollars and not USDA. I don’t recall USDA paying for advertising but admittedly the only part of the USDA budget I pay attention to are the parts that affect me.

Yes, but I wasn't going to explain checkoff dollars as it gets out there. You want to? I was explained how it worked by my ex father in law and he admitted he didn't understand it either but wasn't given a choice. You pay it in and the overall industry or commodity group benefits from it.

I was trying to simple make the point that there are trade groups that promote a product in general such as Eggs, Beef, Pork. Milk and that the USDA flows those "checkoff" moneys to groups like the American Cattleman's Assn. to promote the generic product such as beef but not to promote branded or trade protected registrations. Certified Angus Beef or Beefmaster Breeders United or Texas Wagyu etc. are all just trade marks of a product. Like Bayer to aspirin.


These trade group own trademarks for standards and perceived qualities over other products. Lets look at oil trademarks such as the Pennsylvania Grade Crude Oil Coalition. PGCOC promotes their product as a trade group regulated product and the producers pay money to be members and they promote the benefits of PGCOC crude oil. giving it a preferable status and justified higher pricing. Joe's Oil Co. may pump oil from a well in PA but if he's not a member he can't call it PA Grade. If he does, he risks being sued.

So Wagyu and Angus trade groups are is doing the same thing as an oil trade group promoting beef from a certain blood line that shows certain standards. Wal-mart sells Angus beef from Tyson Foods Inc. and Cargill Inc* but they do not sell Certified Angus Brand of beef. Just like they sell OJ but not all is from the Florida Orange Growers Assn which promotes their FL OJ as the best and demanding higher prices. Bob's OJ can be from FL but he has to be careful what he calls it or risk being sued. Beef trade groups do the same.

Wagyu trade groups are popping up all over but the truth is there is very little difference between them other than the level at which the keep their bloodlines, their diets, and their documentation. Some say they have the purest breed of Japanese trade group XYZ's Brown or Black breeding stock, that they only cross breed with Angus stock "not Certified Angus because there are no "certified Angus" animals just finished meat.

So you have all these brand names trying to promote a product and protect their trademark to get customers to be loyal to and recognize their product as the best.

There are basicly 3 types of Wagyu that I see marketed. 100 % American Wagyu. Bred from Wagyu proven bloodlines and only to the same breed. never having any product that was 100%. Then their are producers that use a Bull who is mostly pure and a female who can be anywhere from 50 to 100% Wagyu and they manage the cattle in a way that when the bloodline is below a certain percentage they remove the cow from breeding to keep from producing say less than 37% Wagyu beef product.

Then their are others trade groups that mix breeds of cattle with Wagyu in different manners and market them in different branding like Angus bred with Wagyu some call American style Kobe, Texas Wagyu or a host of others. These groups work to hold a level of integrity just like the first group but at whatever standards they choose since all they need is a purebred bull to breed.

There are small trade groups, local or regional and non regulated Wagyu ranchers and there are those that say there is a another distinct breed and promote it as being Kobe but that had stopped and they now promote this super pure bred American Akaushi as as close to Trademarked Kobe as you can get but I think it's legal straws and just lawyers and market protecting a nitch which is fine, The Kobe beef at Majestic is from Heatbrand, one of those boutique ranches (and I think American Akaushi Association trade group owner" that say their cows gas does,t smell...'

can you see through the mud any better? these Wagyu ranches didn't invent anything, they just sneeked some protected cattle from Japan into the US and have been exploiting it ever since 1992.




Wagyu is the same and just like oil there are lots of trade groups promoting their products as the best, The trade group like American Angus Association which says that if your most pure blooded when it really comes down to it they are simply selling a brand name and promoting the standards of their trade group.

ts call it motor oil or potatoes. Wagyu would be the trade group prThen there are those who have banded together to market their eggs as better eggs or better pork. and that Wagyu trade groups are basicly selling
