The incredible edible egg.

Is there any food as versatile as the egg? How do you like 'em? Over easy? Sunny side up? Fried hard? Hard or soft boiled? On an English muffin?

If I'm having an egg just to eat, it's gotta be over hard. I can't handle the texture of gooey yolks. I know that's akin to cooking a steak well, but I can't help it. Don't care for scrambled or any other way, and my preference is as a sandwich on toast.

However, I make a damn fine browned butter fresh pasta dish with sage and an over easy egg on top. The egg yolk mixes with the browned butter for a creamy sauce...

I like to mix 3-4 in with a can of corned beef hash and then cook together.

Overall I love eggs.

My favorite ways to have eggs, in order:

Just eggs:
Sunny side up (medium)
Sunny side up (soft)
Over easy (soft)
Over easy (medium)
Scrambled (slow cook method)
Scrambled (fast cook method)
Sunny-side up (hard)
Over hard
soft boiled
poached
hard boiled
basted

Dishes that prominently feature with eggs:
Eggs Benedict
Deviled Eggs
Pasta Carbonara
Quiche
French Toast
Cesar Salad
Egg thing (my own version of hashbrowns, ham, cheddar, and eggs all mixed together in a skillet)
Various breakfast casseroles
Egg Salad
Omelet

Not to mention all the desserts that are based on eggs.

Doctor advised me to go yokeless because of Cholestoral so I haven't eaten ones in awhile. Loved them though.

Eggs are a healthy food though. I eat them by the truckload. It's a myth that they're fattening or bad for your cholesterol.

For anyone who is into hard-boiled eggs - either on their own or in some other recipe - Costco sells packs of two dozen pre-peeled hard-boiled eggs for something like $4. It's glorious.
