Does the meat fall off the hooks?
I have been interested in that since you showed pics, how does hanging 14-15 lbs of meat work out after 12 hours of smoking?

Yep USDA Prime, local butcher, local product with frequent offender discount. The excessive fat is removed.
I quit doing choice brisket. too many mixed results.

I can get a whole Prime brisket at Costco for $40. No ****ing way I'm spending that coin on brisket.
